Spicy Shrimps and Noodles. SO Delicious Coconut Milk Yogurt… It’s Really Good!

Holy wow! So many comments on yesterday’s WIAW post. I’m going to tell you why I secretly like WIAW. I get a day off posting. Don’t get me wrong. I LOVE blogging. I love writing posts and taking pictures, the whole thing. But it’s nice to have 1 day a week where I can leave the camera in my purse.

Is that a horrible thing to say?

Spicy Shrimps and Noodles. SO Delicious Coconut Milk Yogurt… it’s really good!

I love me some yogurt! In fact, it’s the only form of dairy that I miss. Except for cheesy pizza…

So when I had all my Whole Foods Fun a few nights ago I did something crazy and I bought fake yogurt. I’m a yogurt snob so I haven’t even considered this until recently. I’m only breaking down now because it’s been over 9 months since I had a cup of ‘gurt and I’m pretty convinced my tongue doesn’t remember how original stuff tastes.

SO Delicious cultured Coconut Milk is still yogurt. It’s made from cultured coconut milk instead of regular milk. I figured if they’re makin’ it in over 5 flavors it must not be that bad so I bought 2, strawberry and blueberry.

How pretty. I dressed up my yogurt. I added

  • raspberries
  • 1/4 cup granola
  • 1 tsp chia seeds

Now mix it up and and enjoy the coco-gurt. It’s pretty darn good and I’m going back to the market and stocking up. I will never be yogurt-less again.

Last night I whipped up a little of this magic in my kitchen.

The recipe is of course from Real Simple. I promise, I try to find recipes in other places but I always end up getting directed back. Oh well, if it’s good then who cares!

Here’s what ya need… except for the Annie’s Goddess dressing, the olives and the artichoke hearts. Those are for later.

Here’s the recipe, directly from their Website.

Ingredients

    • 12  ounces  angel hair pasta or spaghetti (3/4 of a box)
    • 1  tablespoon  olive oil
    • 2  cloves garlic, finely chopped
    • 1  pound  peeled and deveined medium shrimp
    • 3/4  cup  dry white wine
    • 1/4  teaspoon  crushed red pepper
    • kosher salt
    • 2  tablespoons  butter

Directions

  1. Cook the pasta according to the package directions. Drain and return pasta to the pot.
  2. Meanwhile, heat the oil in a large skillet over medium heat. Add the garlic and cook, stirring, for 1 minute (do not let it brown).
  3. Add the shrimp, wine, red pepper, and ½ teaspoon salt. Simmer until the shrimp are opaque, 2 to 3 minutes. Stir in the butter.
  4. Toss the pasta with the shrimp mixture.

I’m really into things being nutritious and easy so I made this bag of veggies. Totally easy. You just steam ‘em up and add the little packet of sauce and seasonings. Voila. I spruced them up with some roasted brussels sprouts and zucchini.

I liked this bag of veggies because it had no added preservatives and the ingredient list was like this…

This recipe calls for cooking with dry white wine… this was quite the predicament.

I didn’t know if this was like cooking sherry the white version, or what? So I did a quick google search while in the wine isle.

Google told me that when a recipe wants dry white wine to use an American Sauvignon Blanc because of it’s herby-ness. So I bought white wine…

Here’s how I see it… if you cookin’ with wine, you’re drinkin’ some wine.

This recipe sort of freaked me out. Between the shrimp and the white wine for cooking I almost felt too intimidated and went searching for a new recipe.

Luckily, I had google for the wine issue and I found a bag of frozen peeled and deveined shrimp. I don’t think I want to devein things…

This dinner was awesome. The shrimp tasted amazing!!! I’d definitely say that this recipe is the most advanced one I’ve done. But it was really simple (once I read the directions about 8 bajilion times) and it was pretty quick.

Cooking with wine sort of made me feel like a chef!

meringues were pretty tough but these shrimps are up there.
