Roasted Radishes with Feta and Mint

Roasting radishes in the oven makes them tender and sweet. And rather than the crunchy, peppry sharp raw vegetables you may be used to, they bring an added dimension to a warm salad with feta cheese and mint, for a flavor that is decidedly Mediterranean.

Roasting tender spring radishes easily takes away the bite and heat, leaving them sweet and succulent. Paired with lightly browned feta cheese, lemon and mint, this simple warm salad has a very Greek character.
It is also very low in carbs, which is great if you are following that diet.

  • Servings: 2-3
  • Time: 25mins

Roasted Radishes with Feta and Mint

  • 1 bunch radishes, trimmed
  • 4 ounces cubed feta cheese
  • 1 tablespoon extra-virgin olive oil
  • salt and black pepper to taste
  • 1 tablespoon fresh mint, thinly sliced
  • 1/2 lemon


  1. Preheat oven to 450F.
  2. Toss radishes and feta with oil, salt and pepper and place in a small baking dish.
  3. Roast for 20-25 minutes or until radishes are tender, yet firm (time depends on size really)
  4. Serve with lemon juice squeezed over, and garnish with chiffonade of fresh mint.
