Paleo Indian Vegetarian Recipe - Sweet Potato And Tomato Curry

Ingredients


  • 2 tbsp coconut oil
  • 3 finger pinch mustard seeds
  • 250 g sweet potato (cut into small pieces)
  • 2 x 3 finger pinches turmeric
  • 2 x 3 finger pinches chilli powder
  • 4 x 3 finger pinches paprika
  • Juice of 1 lemon
  • Salt
  • 250 g tomatoes (quartered)
  • Small bunch of fresh coriander (garnish)

Method


  1. Heat oil and fry mustard seeds till they pop
  2. Add sweet potato and fry for around 5 minutes.
  3. Add spices, lemon juice and salt, stir and cook for a further 5 minutes.
  4. Add tomatoes and simmer till sweet potato is tender, this will take around 10 minutes.
  5. Garnish with coriander, serve and enjoy.
