How To Make Gobi Ki Foogath (Spiced Cabbage)

Spiced Cabbage is perfect if you want a simple vegetarian meal and it also is a great side for all the main meat dishes. I love enjoying this just like a salad. The spiciness goes really well with the cabbage. For the kids, I make a version without the chillies.

Ingredients

  • 3 tbsp coconut oil
  • 1 onion (finely sliced)
  • 2 cloves garlic (crushed)
  • 3 green chillies (finely chopped)
  • Small piece ginger (finely chopped)
  • 500 g white cabbage (finely sliced)
  • Salt

Method

  1. Fry onion in a large pan till soft.
  2. Add garlic, chillies, ginger and cook for a minute.
  3. Add cabbage and salt, cover and cook stirring occasionally for 15 minutes.
  4. I like the cabbage slightly crunchy so if liquid accumulates, cook uncovered for around 5 minutes to allow for evaporation.
