Mutton Fry Kerala Style
Mutton fry Kerala style is mutton cooked with cut coconuts along with whole spices and spice powders. A real treat for Kerala food lovers. Goes well with rice, roti, parotta.Ingredients: 1 kg mutton 1 teaspoon of turmeric powder 2 tablespoon of red chilly powder 1.5 tablespoon of coriander powder Salt as per taste 50 ml of any refined oil Cinnamon, mace, clove 2 each 250 g of shallots peeled and sliced 200 g of chopped coconut 2 nos of red chilly 2 nos of green chilly slit few springs of curry leaves 2 tablespoon of black pepper corn crushed Salt as per taste
Method:
Heat a pressure cooker and place the mutton in it. Add turmeric, coriander powder, red chilly powder, salt. Pressure cook for 8 whistles and set aside. In the same pan add oil, add cinnamon, mace, cardamom. Add curry leaves, red chilly, green chilly and fry well. Add coconut and fry well till a nice aroma arises. Add shallots, salt and fry well till shallots turn translucent. Add ginger garlic paste and cook till the raw smell goes. Add stock water of the cooked mutton and mix. Add mutton and cook till all stock water gets absorbed. Add fresh ground black pepper powder and toss. Serve hot with roti, parotta or rice.
