It is #BreadBakers time again and for this month the blogging group is doing "Breakfast Breads" hosted by Felice Geoghegan of All That's Left are the Crumbs, and Stacy Rushton of Food Lust People Love.

This is something I made one early morning when I couldn't sleep and was up before dark-thirty. My hubster was still asleep, and I recalled how I had been wanting to recreate some Hardee's Cinnamon biscuits (one of his old-time-grab-on-the-way-to-work indulgences), but never got around to it.

And now we are both low carbing for the moment, so I couldn't really do the regular type for his breakfast. So I set out to do these so he would wake to the enticing aromas of cinnamon deliciousness.

I cut the amount back because even as low carb you really shouldn't be having more than one of these. So I didn't want a full dozen or more hanging about. It's a one-off treat for us here. I hope you enjoy them as much as we did.

  • 1 cup plus 2 tablespoons Bob's Red Mill Low-Carb Baking Mix
  • 1 egg, lightly beaten
  • 1-1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 2 tablespoons Starbuck's Cinnamon Dolce latte sugar-free syrup or other cinnamon flavored sugar-free syrup, such as Torani
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon Swerve granular (erythritol)
  • 2 tablespoons butter
  • 1/4 cup heavy cream
  • 1/3 cup raisins

The nutrition labels on this (I have included two) have a little disclaimer because the nutrition-calculator I am using does not subtract out sugar alcohols (erythritol) which do not typically impact the blood sugar levels. But I can put up a label to show you just how much sugar alcohols are in this, and you can do the mental math subtracting it out if you like. So each one of these delicious babies has 34 carb grams minus 4.3 for fiber, leaving 29.7 grams, then minus 13.3 grams of alcohols leaving 16.4, the majority of that being the raisins. And I leave that there for you to decide for yourself. I know it is not for everyone doing every type of low carb diet. These are not keto, but can fit into a moderately low carb diet. Considering that a regular biscuit like this from Hardees clocks in at 45 carb grams, you decide. I figure if you balance the rest of your meal and day, you can probably squeeze this in once in awhile, rather than hold your breath on sweets and eventually give up. Moderation in everything, even when cutting carbs, I think.
