Living in the Desert Has Been Great! There’s No Traffic. ...

Living in the desert has been great! There’s no traffic. Everyone is pretty friendly. I love our apartment. I am so happy at my new office. Peachy keen, right? Well, not exactly. We get these things called sand storms and supposedly this is the worst the desert has seen in a long time. Of course, now that we’re living here. The sand storms cause power outages and then our cable and internet go out and they usually take hours to come back on. It’s pretty frustrating. I know I shouldn’t complain. I heard Colorado got snow again today and I know the Midwest is having some pretty bad tornadoes right now. So we are pretty lucky when it comes down to it. But anything that comes between me and my ability to post a blog is not on my good list.
Since I couldn’t write about day 15 on day 15, I am doing it on day 16. And I will post day 16’s recap later this evening. Got it? Good.
My parents spent the night Saturday night so yesterday morning I made them oatmeal with berries for breakfast. I’ll admit, it looked pretty good. BUT I ate my eggs, bacon, chicken sausage and quick guac instead. I also had coffee with homemade creamer. And it was quite delicious. Still not tired of this meal.Living in the desert has been great! There’s no traffic. ...
We had company over for lunch. My parents, my boyfriend’s parents, his grandpa and his friend. The afternoon was lovely. We ate a lot, talked a lot and laughed a lot. My boyfriend prepared all the food. He made hamburgers, salmon burgers (bleh), french fries, tater tots, sweet potato fries and he cut up watermelon. And because I couldn’t eat any of the fries (the sweet potato fries had added sugar and canola oil) he made me a baked sweet potato. So I ate a hamburger patty, a baked sweet potato and watermelon. I honestly didn’t like the baked sweet potato. I’m all about texture and the texture reminded me of baby food. I only ate a few bites and threw away the rest. At least I tried it!Living in the desert has been great! There’s no traffic. ...
For dessert my boyfriend bought a Tres Leches cake and morning buns for everyone to choose from. I did the cutting and handing out and then I sat there and enjoyed the conversation with everyone. I honestly didn’t even feel a void.

Here are a couple photos from our Mother’s Day get together.Living in the desert has been great! There’s no traffic. ...

After everyone left we ran to Wal-Mart to get some dishwasher tablets. I just happened to see this. Living in the desert has been great! There’s no traffic. ...It’s a hard world out there. Temptations around every corner. I am a sucker for anything mint chocolate. I’ll have to come up with a real version of this when I’m done with the Whole 30, one without all those added ingredients and chemicals. For dinner I ate another hamburger patty (we’ll have leftovers for a few days) with pineapple and watermelon with chile powder. It was so good! I hate the heat but I love when all the good fruit is in season!Living in the desert has been great! There’s no traffic. ...
I hope you all had a wonderful Mother’s Day!
