"Let's Burn This Candle" and Beat Cancer - Recipe Roundup

Today is a very special day here on Take A Bite Out of Boca. Well, technically tomorrow is the big day. But I'm telling you about it today.
About a year ago, my cousin Leah was diagnosed with brain cancer. Leah is a Boca local, born and raised, but has lived all over the country. She is a talented architect with her own company and builds beautiful homes in Palm Beach. She has a crazy and adorable 4-year-old son, Max, and her husband, Michael, is one of the most caring and loving men I know. Leah has been traveling to Duke University in North Carolina to the Preston Robert Tisch Brain Tumor Center for her treatments and checkups and we all keep our heads full of positive thoughts each and every day. Tomorrow, Leah and her family are participating in Angels Among Us, a 5K and Family Fun Walk that supports the Duke Cancer center and its efforts to find a cure for brain cancer. 
"Angels Among Us is a celebration of life, strength, courage and commitment.  The first event in 1994, $27,000 was raised; in 2013, $2,015,618!  Since its inception, all money raised at the event supports research and finding a cure for brain tumors at the Preston Robert Tisch Brain Tumor Center at Duke.  The event has a family friendly focus, with a chance to have fun while giving back.
Funds raised through Angels Among Us, are quickly delivered where they are needed most in the fight against brain cancer. Since 1994, $14 million has been donated to The Preston Robert Tisch Brain Tumor Center at Duke from Angels Among Us. Your support of this event will help the Tisch Brain Tumor Center continue to lead the world in the development of new therapies, quality of life initiatives and innovative treatment techniques."

Leah's team, Team 3W, stands for The Warrior (Leah), The Worrier (Michael), and The Wildman (Max), and their motto is "Let's burn this candle!" I wish I could be there tomorrow with them, but since I can't, I decided to reach out to my food blogger friends and put together this amazing recipe roundup full of healthy and delicious dishes using cancer-fighting ingredients — things I know Leah will love! 

So far, Leah has raised over $15,000 — and it will ALL go toward the brain tumor research needed to end the fight against cancer. How amazing is that?! Some of these bloggers did more than just share a recipe; they also donated. I cannot express the amount of appreciation and gratitude my family and I feel. Sometimes it amazes me how kind-hearted the food blogging community is. Leah has been so strong through all of this, and the best thing we can do is be right there, fighting along with her!
