My recipe of the day is for instant pot pork riblets with sauerkraut, one of the meals I enjoy making when the weather turns cool, and obvious a huge #FallFlavor for me. This is something I have eaten my entire life as my Mom used to make it now and again when I was little.

What are pork riblets?

If you don't know what pork riblets are, they are basically St. Louis ribs that have been cut in half into little finger lengths. They will come in long slender slabs and you just cut them apart to fit the pressure cooker.

Once in awhile I will see these on sale at the market and I like to keep them because they are not only easy to eat, but being sold in ten pound boxes, I can divide them up and freeze. Later on I might make little bbq riblets or some 5-SPice Asian ribs as a party appetizer.

But for Fall, I like having these with mashed and a veggie side. It's a very "Mom" kind of supper and the Instant Pot takes the work right out of it.
