My recipe of the day is for making hard-cooked eggs in the instant pot as well as making the classic version of deviled eggs.

The process for cooking eggs in the instant pot is quite easy. Using the rack you can stack the eggs pyramid style. I'm not sure that once you include the heat up time and the time to release the steam it's any faster, but it does produce nicely cooked eggs and mine were easy to peel.

If you don't have an Instant Pot, what I do is take eggs that I bought 5-7 days earlier, place them in a cold water start with enough water to cover. Bring to a boil, boil ten minutes, then remove from heat, immediately pour off the hot water and run cold tap water over them to cool down. It's pretty effective.

Instant Pot Deviled Eggs

The deviled eggs are a "classic" plain version. I cut back on the mayo and add some sour cream, which makes them very creamy tasting. I add a little vinegar to brighten the flavor. Some people will add pickle juice. I prefer not to but to each their own.

I have listed a few other deviled egg recipes I like to make. Bacon and cheddar are fantastic but I do love my bacon.
