L a gubana, mi hanno spiegato, non è un dolce solo di natale, ma di tutte le grandi occasioni. L'origine è nelle Valli del Natisone anche se questo dolce era apparso già sulle tavole dei Veneziani nel 1400. Era originariamente un dolce che poteva essere realizzato con gli ingredienti che si trovavano sul territorio. O riginariamente questo dolce veniva fatto solo in casa o dai pasticcieri su esplicita richiesta delle famiglie.

Quello che ho pensato io, vendendo questo meraviglioso dolce, è stato: come sarebbe a colazione con una bella tazzona di La gubana è un rotolo di pasta ripieno di noci, uva passa, pinoli, limone, vaniglia e se ti piacciono mandorle e nocciole, aggiunta di grappa.

La ricetta mi sembra abbastanza complessa quindi il suggerimento è di assaggiarla già fatta: si compra nei mercatini del Friuli di questo periodo e nelle pasticcerie. Sarebbe un dolce risveglio!
