I can’t wait for the weekend to begin—I know the week have just started but to me this past weekend flew by very quickly. I have been busy lately, between my job, home and unexpected little things here and there. So I’m really looking forward to a relaxing upcoming weekend—

But I did have some fun during this past weekend though…yes, we watched a movie--actually it was the second time J. and I watched it.  
Last Saturday after doing some shopping for the week , J. and I decided to stay home, enjoy cooking and watcha movie called HOME—it is a fascinated film full of breath-taking nature photography by a very talented French photographer -Yann Arthus-Bertrand

You must have heard the saying;‘A picture speaks a thousand words’Well, this movie shows you exactly that.This is an absolutely outstanding movie!
We had this focaccia as a quick appetizer before eating dinner, I just used simple ingredients --Red onion, dried apricot, walnuts, Parmesan cheese, blue cheese andfresh basil from my little garden. I love red onions ! I particularly love to use them as toppings for savory breads like flat breads and pizzas. Well, you know I love to keep it simple and tasty—The dough for this focaccia is easy and super-versatile--I use the same basic dough for pizza too.

After dinner, we wrapped the soft –warm blanket around the both of us and we snuggled deep down into the couch while enjoying our movie night. 
The movie is about our beautiful Planet, our species, us and the dramatic changes {already happening} on the resources of our planet, including mineral and energy resources.
It has a very important message for all of us.

Easy Focaccia Dough Makes 1 2 C. All Purpose Flour-Plain Flour 3/4 C. Warm water 1/4 tsp. Salt 1 tsp. Dry yeast 1 tsp. Sugar 1 tsp. Olive oil Topping: 1/2 Red onion, finely sliced 1/4 C. Dried apricot, sliced 1/4 C. Walnut, chopped 1/4 C. Blue Cheese 1/4 C. Parmesan Cheese Fresh Basil, leaves Olive oil Garlic Salt Preparation: Preheat oven at 200 C/ 400 F. In a medium bowl combine flour and salt-mix. Take a small bowl. Add yeast, warm water, sugar and olive oil--Mix well and cover with a plate.Wait (about 10 minutes) for bubbles to appear in the yeast. Once the bubbles have appeared, and using a wooden spoon start to mix together the ingredients to form the dough. Then using your hands work the dough for about 5 minutes until dough is smooth and elastic. Cover and set in warm part of the kitchen-let the dough rest for 20 minutes. When ready, just punch down the dough over a floured surface and shape into a rectangle. Transfer the dough into lightly greased baking tray. Brush the dough with olive oil and sprinkle with garlic salt, Parmesan cheese, onions, apricots, walnuts, blue cheese and basil. Bake for 15 minutes and serve hot.
