My recipe of the day is for a cold brew pumpkin spice latte for #FallFlavors week, using coffee provided by Door County Coffee.

You don't need an espresso machine to make this or any other specialized equipment really. I do use a pour-over pot to simplify the straining out of the grounds, but before I had ever bought that you could strain with a coffee filter placed in a sieve. Or if you have a French press pot, that could also be used. But I do like the pour-over pot since it is quick.

To prep the latte you first need to make the cold brew, which involves steeping the coffee grounds in cold water in a quart canning jar (or other jar- I just always use the canning jar) overnight, and strain it in the morning. This will yield approximately 3.5 cups cold brew concentrate.

And while I used Door County's delicious pumpkin spice coffee in this, you could use any of their flavors (and I know this because they sent me quite a few as you can see in the photo). For those latte flavors where you don't want pumpkin flavor, just omit the pumpkin. But for purposes of the latte we will be using the concentrate full strength, since we aren't using espresso to make the drink.

If you like, you can easily make a cold brew coffee by mixing the concentrate 50:50 with cold filtered water and pour over ice. I drink those all summer long when I don't want hot coffee. I'll add a splash of cream as I take mine that way but you can sweeten as you prefer as well.

The concentrate in the jar can be kept in the refrigerator up to a week. This is great if you just want one cup or one glass. You can serve it iced or heat it in a saucepan or in the microwave. So you can see the concentrate is very versatile.
