Extreme Sandwich For Food Lovers

Let’s create a scrumptious extreme sandwich

Follow my recipe to make a great Chicken Pesto Cranberry walnut;

-  Bread

One of the effective factors in sandwich’s taste is the selection of the bread quality.  For This sandwich, a fresh and crispy 12-inch Ciabatta is perfect.

-  Garlic Sauce

  • Grab a small mixing bowl and add
  • 2 spoons of Mayonnaise,
  • 1 teaspoon of aged balsamic vinegar,
  • 1 teaspoon of fresh squeezes lime,
  • 3/4 spoon of freshly grinned garlic.
  • 1/2 teaspoon of Pomegranate sauce (you can buy this from Mediterranean shops)
  • 1/2 teaspoon of black coarse pepper.

Mix evenly using whisk

- Fresh Pesto

Pesto originated in Genoa and Liguria. To make a fresh and traditional pesto, you need fresh Basil.

  • Grab one green bunch and wash it and place it in your blender.
  • 4 pieces of fresh garlic,
  • 4 Oz Parmesan cheese (Parmigiano Reggiano Romano),
  • 2 spoon of European pine nuts (some people use walnut)
  • Add salt and pepper.

Mix in a slow speed and add Extra Virgin olive oil as the blender is on until the mix turns into a paste.

-  Roasted Red Bell Pepper

Grab a fresh red bell pepper and slice it in thick pieces.  pour a little olive oil on top and mix it then place it in the oven until roasted.  You can also grill the pepper.

- Chicken Walnut Mix 

This mix is the heart of the sandwich.  Place a mixing bowl and add;

  • Less than 1/2 Lb. fresh pulled chicken breast,
  • 2 spoon of extra virgin olive oil,
  • 1 spoon of thinly sliced green onion,
  • 1/2 of sliced fresh Hass avocado,
  • Add 1 1/2 spoon of Cranberry (use “Oceanspray” brand sweet cranberry),
  • 1 spoon of Caramel sauce
  • 1 1/2 spoon of crushed walnut,
  • 1/2 teaspoon of Cinnamon,
  • 1/2 teaspoon of vanilla powder,
  • 1/2 teaspoon of shredded coconut

Mix them evenly inside the bowl.

Use a bread knife and slice the bread in half.  Empty the extra dough.  Spread the Garlic sauce evenly on one side of the bread and the pesto sauce on the other slice.  Every bite should taste as delicious, so consistency is the key.

Add your Chicken walnut mix on the bread and on top use fresh baby Italian Arugula.  On top use your kitchen tong and place the roasted bell peppers on top.  Add two slices of aged Provolone Cheese and place the sandwich in the Convention Oven to get toasty.  You can use the “broil” option in regular ovens.  To get the best result, use a little butter and brush it on the bread before placing it in the oven.  Wait until the bread is golden color then remove it from the oven.

Side recommendation:

It goes perfectly with homemade Coleslaw:

-  Wash and thinly shred a fresh red and green cabbage.  Add a right amount of shredded carrot. Mix it in a bowl with your Garlic sauce and serve on the side.
