Some like to have soups as thin and some as creamy. If you love to have thin soup, avoid adding cornflour mixture. Corn flour is a thickening agent. So avoidance of adding it will give you thin consistency.

I have seen some of the carrot & tomato soup recipes include a tbsp of sugar. I didn't try it. If you like mild sweetness in soup, you can add it. Here are some of the soup recipes which I already posted. Do check it 😊

How to make carrot and tomato soup?

  1. Chop carrot, tomato, onion, garlic, and ginger.
  2. In a saucepan, add ghee or butter, add chopped onions to it and saute for a second.
  3. Followed with it, add chopped carrot, garlic, and ginger.
  4. Add ½ tsp of salt to it and mix well.
  5. Finally, add the chopped tomatoes.
  6. Mix and cook closed in medium-low flame for 2 to 3 mins.
  7. Stir occasionally to avoid burnt at the bottom.
  8. Check the veggies are cooked, once done turn off the flame and cool completely.
  9. Once cooled, grind to a fine puree and keep aside.
  10. Now add 1 tbsp of ghee or butter in a saucepan, add brinji leaf to it.
  11. Add the grounded paste and 2 cups of water rinsed in the mixer.
  12. Add enough salt required for soup.
  13. Mix and allow to boil for 4 to 5 mins.
  14. Meanwhile, make ready the cornflour mixture by adding a tbsp of cornflour in a separate bowl and 2 tbsp of water.
  15. Mix well and add to soup.
  16. You can see the soup starts thickening.
  17. Switch off the flame when the soup reaches the desired consistency.
  18. Serve with the topping of pepper powder and bread croutons.
