Banana Foster Parfait with Salted Caramel Sauce

Working from home sure has its challenges. While it's definitely a blessing most of the time because I can be home with the kids and enjoy them growing up, it tends to get a little bit boring without the regular water cooler drama that most people get. Yes, a little bit of that is a good thing too. I miss it sometimes. Not all the time, but sometimes.

So, once in a while, I change things up a little bit just to get out of the monotony. I dress up a little bit. I say or do something I wouldn't normally do. I allow myself an extra treat during the day. Um today, I'm allowing myself a little treat.

BANANA FOSTER PARFAIT WITH SALTED CARAMEL SAUCE

It's #TopItTuesday, something Silk suggested. Because they think that Tuesday is the perfect day to give yourself a little bit of extra love. And they're right. Mondays are rough, and once you get through them, Tuesdays are kind of down. So why not treat yourself a little this next Tuesday too? You can start with this recipe I came up with for Bananas Foster Parfaits.

Don't they look delicious? They are! The recipe is fairly simple - you use Silk dairy‐free yogurt alternative, bananas, salted caramel sauce and pecans. Here's the full recipe.

BANANA FOSTER PARFAIT WITH SALTED CARAMEL SAUCE

INGREDIENTS

  • 1 banana, chopped
  • Silk Vanilla Yogurt (I used two but you can use one)
  • Salted Caramel Sauce
  • Pecans, to garnish

INSTRUCTIONS

  1. In a medium-sized bowl or mason jar, spoon the yogurt into the jar (or bowl) making sure to cover at least half of it.
  2. Then take the chopped banana and place them on top of the yogurt.
  3. Lastly drizzle the caramel over the bananas and top with pecans.

I really like Silk dairy‐free yogurt alternative. As I've mentioned once or twice before, I don't have a strong reaction to lactose, but plain milk, ice cream, or yogurt - in cases where the food or drink contains a lot of lactose, I get an uncomfortable stomach ache.

And that's not really a way to show myself more love. So Silk gives me a nice alternative. I've always been a fan of their products. They have such variety and great flavor. Other topping ideas include cookie crumbles, sprinkles, gummy bears, fruit sauces, graham cracker crumbles, and crushed candy.
