When It’s the Weekend… Enjoy Mexican Food

The 1 thing I’m not 234% jazzed about with my new Anthropologie job is that I don’t have conventional weekends. I’ve been lucky this week and last because I’ve gotten 2 consecutive days off. But most weeks I just get a day off twice throughout the week. I enjoy my weekend (mostly) while Max is at work but it’s important to treat myself to the weekend experience, even if it falls on a Tuesday and a Wednesday. I stay in bed late. Sometimes, I don’t change out of my PJ’s (at all!!!).

For dinner we made some at-home Mexican Food and are watching 2 wedding type movies: The 5 Year Engagement and I Love You Man

It’s gonna be a good night!

I made some roasted veggies with salt and pepper for extra filling power to go with a Chicken Tortilla Casserole I found in the deli section of Savemart.

We actually LOVED this casserole. And anything that’s pre-made and easy that we LOVE… I WILL BUY AGAIN!

I prepped a bunch of veggies.

It’s a weird combo… asparagus, brussels sprouts and red bell pepper. But I chose these because they were on their last breath in the fridge.

Just roast in the oven at 375 for 4o minutes. Top with salt and pepper.

We snacked on a few chips and salsa and Modelo Especial while we cooked.

All in all I had 1 serving of casserole, a heaping plate of veggies, 1 serving of chips, 2 beers (1 while cooking and 1 while eating) and a boat load of salsa.

Eeeee! I’m so excited. Max is working from home tomorrow so we can leave early to see a potential wedding venue. Ahhhh! It’s all so real.
