Wheat and Diary Free Rock Cakes/Nanny Violet's original Rock Cake Recipe
Another brilliant recipe from my friend Lisa, a recipe for her son who has a wheat and diary free diet.

What you will need...
226g doves gluten and wheat free self raising flour
1 tbs caster sugar
56g vitalite sunflower spread
2 eggs
Handful of Raisins or dark chic chips
What you will need to do...
Pre heat oven 160 c
Using the rubbing in method rub together the flour and vitalite
Add the sugar and 2 eggs and mix well
Mix the raisins or chocolate chips into the firm dough
Grease a baking tray with vitalite
Break off 6 small/ medium mounds and arrange on the baking tray
Bake for 20 mins until golden
ICING
Fill half a measuring jug with icing sugar and add a little water mix well add more sugar or water to get the consistency you like
Drizzle over the rock cakes
Best eaten warm or on the day of baking
Due to no gluten being in them they are a little dry the following day , but good as a scone like cake with jam.
The recipe below is not wheat or dairy free but thought you would like to see my nan's original recipe .
Nanny Violet's Rock Cake Recipe
What you will need...
226g self raising flour
1 tbs caster sugar
56g stork margarine
1 egg
Little milk 
Good handful of raisins
Granulated sugar
What you will need to do...
Preheat oven 160c
Rub in the flour and stork margarine
Add sugar and egg, mix well
Add a little milk to make dropping consistency
Grease a baking tray and drop mounds of mixture roughly about 6-8
Sprinkle with granulated sugar and bake for 20 mins or until golden brown
