Ugh that time. You know what I mean right? That time of the month that comes every month..and you just dread it. The cramping. The bloating. The just overall hormones all over the place. I'm sure we're all sweet and pleasant when that time comes ( my husband jokes he needs to get a hotel room sometimes ) but hey, I can't help when I get snappy. With working full time, a little toddler, 2 cats and a working husband my time is extremely limited. I always enjoy a little "me time" of course. I mean, its better then closing my closet door to hide from my family when I'm having a moments. When I need a few minutes to myself, comfort food always does the trick. For me, comfort is chocolate, ooey gooey peanut butter and salt. So I came up with this delicious PMS cookies that combines my love affair of all those things and more.
Ingredients:
1 box Ritz crackers
1 jar(s) peanut butter
1 jar(s) marshmallow cream
1 box chocolate bark
Directions:
1. Spread peanut butter, then marshmallow cream onto Ritz crackers.
2. Sandwich together 
3. Melt chocolate bark (I like Ghirardelli the best) in microwave or double boiler. Dip sandwiched cookies into chocolate, covering both sides. 
5. Place cookies on waxed paper and allow to harden. (I find that if you put the paper or silpat on a cookie sheet and place it in the freezer for 5 minutes, the cookies harden up faster!)
6. Store in airtight container - Enjoy!!
