What I Eat In A Day: Weekday Edition

What I eat in a weekday and what I eat at the weekend are two very different stories. I recently put some weight on (woops!) so made a lot of changes to my diet. During weekdays, I eat really clean (or have been for AT LEAST a week. LOL) and at the weekends, I eat clean during the day but not in the evenings. They are what I live for #NormalGirlProblems.
So here's a look at what I eat in a day: Weekday edition.
What I Eat In A Day: Weekday Edition
BREAKFAST
Breakfast is the most important meal of the day apparently so I always make sure never to skip it. I have been experimenting with overnight oats recently (I use wholegrain rolled oats and coconut milk) which I team with some fruit (I love flat peaches or watermelon). A big glass of water and a coffee later, and I'm ready to face the day! If I don't make this then I'll have some bran flakes with coconut milk.
MID MORNING SNACK
I've been snacking on fruit. I like flat peaches, Pears, strawberries or Watermelon. I always drink water throughout the day too.
What I Eat In A Day: Weekday Edition
LUNCH
Lunch for me is usually around 1pm and I always end up having salad. I recently bought some of the 'Good Food' salad boxes from Asda and I must say I was really impressed with them. They're good for when you're on the go and are healthy. If I'm making it from scratch, I like to have Tuna or Eggs with light dressing, lettuce, carrots and onions.
AFTERNOON SNACK
More fruit or two wholegrain sesame seed crackers
DINNERMy Mum makes homemade soup every week and I eat it two days a week. It's either vegetable, vegetarian Lentil, or Potato. I usually have eggs on wholegrain toast afterwards or a fruit salad with fat free yoghurt.  For the other three days, I normally have fish (usually Salmon, Lemon Sole or Sea Bass) with sweet Potato or a salad with some new potatoes.
Aside from that, I will eat a cracker or some more fruit if I feel hungry and I always have 2/3 coffee's everyday. My diet is pretty damn good I think!
