Weight Watchers Meal Ideas – Cooking Light Cinnamon Rolls and Chicken Tacos

Happy Easter! I hope if you celebrate that you had a great time with family and friends. It was such a busy day yesterday – today was a day to CHILLAX! But I was still busy in my kitchen. I was thinking on Saturday afternoon what to make for Easter breakfast – I didn’t want to be spending an hour making something so I decided to make Cinnamon Rolls. I’ve made cinnamon rolls lots of times – but not really so much thinking of Weight Watchers Points. When I Googled “low calorie cinnamon rolls from scratch” – one of the first pages to come up was from Cooking Light. I didn’t look any further because everything I’ve made from them is always amazing. It was quite a process – not so much hands on, but it had 3 separate rises for the dough. But in the end it was definitely worth it. 6 Smart Points for one cinnamon roll! (sweet!) HERE is their recipe.

I did have one dilemma – although these were low in points – how was I going to just eat one? I LOVE sweets and I could easily have had 3! I decided to fill my plate with other things so it would take me longer to eat. I had the cinnamon roll, 1 hard boiled egg, 1 apple and 3 slices reduced fat salami for 10 Smart Points.

This was a late morning breakfast so kind of my breakfast and lunch. It kept me full for hours!

Believe it or not I didn’t plan a giant Easter meal dinner. My family and I were talking about what to make when I asked them if I could make something a little more Weight Watchers friendly and they were all on board! Chicken tacos!

There really isn’t a recipe. I just diced up chicken, tossed it in taco seasoning and 1/2 cup of water – and grilled this on my grill pan on the stove top. I also added some diced onions and peppers in there. On the side I made my Copycat Chipotle Cilantro Brown Rice.

To save even more on points I decided on eating mine on Romaine lettuce leaves. My plate was 4 Romaine lettuce leaves, 3/4 cup rice, 3.5 oz. chicken, 1/2 oz. cheddar cheese and diced onions, peppers, salsa and hot sauce!

I hope if you were watching what you ate today – you made better choices – and if not – don’t fret – tomorrow is a new day to get back on track!

I learned that I can ask my family for support in making healthier choices and just because it’s Easter we don’t have to eat all the high calorie foods I used to make for Easter and just eat and eat.
