Weekend Prep Part 2

After my belated lunch I headed to downtown Boulder where I took advantage of Starbucks' frappuccino happy hour to pick up a treat and enjoyed the beautiful flowers while drinking it!  I also stopped by Penzey's and picked up some almond extract for a project I had planned for later in the day.

After a bit of grocery shopping I headed home to get started on dinner. I had some sweet potatoes I needed to use since they've been going bad on me really quick for some reason lately - any ideas?  I'm not storing them by onions or anything which I've heard not to do, can't figure it out.  Anyway, I picked up some kale and combined with the potatoes for katheats' sweet potato and kale 'soup' which I've made before and really liked.
Served for dinner with zucchini, watermelon, and strawberries for a perfect summery dinner and leftovers put in the freezer for lunches during the week!

I also wanted to give a new nut butter a try and was drawn in by this cookie dough almond butter from edible perspective.  This was my first try at almond butter and it went pretty well, I did add some canola oil to make it slightly creamier but could have probably gotten by without it since the almonds butterized nicely.  My new food processor is really fun to use and I'm glad I took the plunge.  I could have never done this in my mini prep!
It's good but as is my tendency I overdid the extract a bit, this time it was the almond.  I didn't have a 1/3 tsp measuring spoon so I tried to underfill the 1/2 tsp but still got too much in there.  Live and learn I guess...

I'm now collapsed on my couch and working on my last project of the day- some brown rice bubbling away in the rice cooker to stick in the freezer for lazier days. :)
