NOTE: I spend my
Wednesdays Unplugged from appointments. It's my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian 'Quote Cup' passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. I love trying new recipes...and love getting recipes you would like to share.

This has been a refreshing week... we spent several quiet days visiting my uncle on the edge of small town Wisconsin... visiting, cooking, doing a jigsaw puzzle of Christmas at NYC's Rockefeller Center and building a Lego model of Fallingwater, a destination on my bucket list and perfect Christmas gift. We came home to the coldest days in a year, with filigree frost on the window.

RECIPE OF THE WEEK

This week's recipe comes from our New Year's Eve dinner... at our house with friends both local and from California. A local friend created a salad which she brought to share. It was delicious! She agreed to share the recipe... like many salads, not exact but tossed to taste.

NANCY'S NEW YEARS SALAD

recipe from Nancy Swanson

  • Mixed greens - romaine, red lettuce, boston lettuce
    Salad-nancy
  • Craisins
  • Mandarin oranges
  • Slivered almonds

DRESSING

  • 3/4 cup olive oil
  • 1/4 cup white wine vinegar
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon coarsely ground black pepper
  • Garlic, dill, basil to taste

Add light coating of dressing and gently toss... save the rest of the dressing for another salad!
