Wednesdays Unplugged - Grilled Lemon Chicken with Lemon Basil Pasta

NOTE: I spend my Wednesdays Unplugged from appointments. It's my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian 'Quote Cup' passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. I love trying new recipes...and love getting recipes you would like to share!

RECIPE OF THE WEEK This marinated chicken was amazingly tender and flavorful... delicious with lemon basil pasta... GRILLED LEMON CHICKEN with lemon basil pasta MARINATED GRILLED CHICKEN
  • 4 chicken breasts
  • 3/4 cup olive oil
  • Juice of 4 lemons
  • 1 tablespoon Dijon mustard
  • Squeeze of honey
  • Dash of salt
Pound chicken breasts to even thickness. Mix other ingredients and pour over chicken. Marinate at least a couple hours or overnight. Oil grill and sear chicken over high heat, then reduce heat and cover, cook about 5 minutes each side or until done.
