Water Kefir Tumeric Bread

During my last trip to Yogja, I managed to get some really good quality tumeric powder.  I am sure you know the good value of Tumeric.

Actually I had other use in mind but since it is a big packet, I thought it might be pretty to use in my bread.  Water Kefir Tumeric BreadThe aroma of tumeric baking in the oven is really nice and I am happy how this Water Kefir Tumeric Bread turned out.

Observation: The dough is manageable and because I did not flour the proofing well, I nearly destroy it.

I need to replace my scoring blade as it was not sharp anymore.  Wasted my money because I only used it a few times.  Perhaps I should just buy razor blade instead.

The texture is really good and the Tumeric aroma remains.  The texture is soft and yet has a chew.

I will need to improve on the crumb though.

What you need:
250g bread flour125g kefir starter
100g water
50g kefir water10g brown sugar2 tsp tumeric powder
1 tsp salt15g softened unsalted butter
Method:

Mix water and water kefir together.  

Add into the bread flour and mix to form a lump.  Let it rest for 30 mins.Add in the rest of the ingredient except salt and butter, knead until the dough is smooth and not sticking to the bowl.Add in salt and butter.  Knead until it pass the window pane stage.Shape into a ball and let it rest for half hour.Do a stretch and fold and let it rest for another 30 mins.Preheat oven to 230°C with a baking stone inside.Tension shape it and place in a floured proofing basket.  Cover loosely with cloth and let it rest for 45 mins.Score the bread and bake for 20 mins.  Throw in some ice after you placed the dough on the baking stone.Cool and cut.
