Vendakai Varuval | Okra Fry

Okra Fry | Vendakai Varuval Life has many phases. Gone are the days where my tiny tot can be just force fed. Being a young man, he can now clearly explain what he wants and what not! Being a real cup taster, his taste buds are very alert. He clearly states that he can eat veggies only if it is tasty. His class teacher has told all the kinder garden children to eat 2 servings of fruits and vegetables each day. Thanks to his obedience (and the teacher) for they have to update her what vegetables and fruits they ate that day.
Well now that I have a new task of making vegetables in tasty, healthy and less hot version to make my son eat is a challenge. The first success for the Vandakai Varuval. The okra or the lady's finger fry. Before I get into the recipe some quick tips: wash okra well and pat  dry with a tissue paper to avoid the webby-gooey stuff while cooking. I usually wash them the previus night and pread them on kitchen towel to make them dry at ease.


Ingredients
  • 12 nos Okra | Lady's Finger
  • 3 tablespoon Rice Bran Oil
  • as per taste Salt
  • 1/2 teaspoon Red Chilly Powder
  • few Curry Leaves
Cooking Directions
Vendakai Varuval | Okra Fry
  1. Chop the okra to half inch pieces.
  2. Chop 4 okra at a time and fry the batch in 3 tablespoon of rice bran oil.
  3. Okra should become crisp and dark green.
  4. Repeat the same for 12 okra's.
  5. Remove the fried okra and set aside.
Vendakai Varuval | Okra Fry
  1. In the same wok with the balance oil add curry leaves.
  2. Add fried okra and add chilly powder and salt.
  3. Toss them to coat the salt and chilly powder well.
  4. Serve with pulao or roti (hot or pack it for lunch)
  5. TIP: If packing for lunch, let the okra cool down else the okra will sweat and become soggy.
