Vegetarian Pasta Recipe

I have always been vegetarian every Tuesdays and Fridays but not my husband, and it was hard to find vegetarian meals on those days other than making vegetarian curries. I have been recently preparing different vegetarian pasta dishes with various vegetables so it is healthy and tasty at the same time. The three main vegetables I have used here are courgette, carrot and aubergine.

  1. Boil water in a large pan, salt the water and put the pasta in the boiling water.

  2. Whilst the pasta is cooking, heat a large frying pan with oil and then add the vegetables. Cook until the vegetables become softened.

  3. Drain the water out of pasta and transfer to the cooked vegetables. Mix it all well.

  4. Add Philadelphia Cheese spread to the pasta and mix it gently. Ensure that the cheese is melted evenly to get a great flavour.

  5. To season, add salt and some freshly ground pepper according to your taste. Enjoy!!
