Vegan Spelt Bread!

This morning, I invented this lovely VEGAN  SPELT BREAD! Yay! Check it out!

This healthy vegan spelt bread is very healthy, filling & not to mention very delicious! Ha! It takes a while to make but it is all worth it in the end! It only has 5 ingredients! Two slices of this lovely tasty bread is enough! I also added a good fruity extra virgin olive oil to it, to bind & for extra flavour!

Vegan Spelt Bread!
Recipe: For 1 bread or 18 slices

Ingredients:

250 gr organic white spelt flour

250 gr organic whole grain spelt flour

10 gr vegan dried yeast

25 gr of a fruity extra virgin olive oil

325 gr lukewarm water

7 gr (1 1/2 teaspoon) finely milled Maldon sea salt

Method:

  1. Preheat your oven to 200°C (400 °F) for 10 minutes. Then you turn your oven off. In here, the dough will rise & rest for about 30 minutes.
  2. In a large bowl, add white & whole grain spelt flour, olive oil, dried yeast & lukewarm water. Mix well with a spoon & then with your hands. Now, you will end up with a dough. Form a round shape. Do not knead yet! Place into an oiled bowl & place a doubled clean towel over the bowl. Put onto a Silpat on an oven rack. Place into the warm oven & close the door. Leave you dough to rise, rest for 30 minutes.
  3. After that time, take dough bowl out of the oven. Preheat your oven back at 200°C (400°F) for 10 minutes. Flour your kitchen counter with some whole grain spelt flour & with help of a dough scraper, take dough out of the bowl. Your dough is now in front of you. Knock it back a bit & spread it flattened all out. Now, add all the sea salt over the surface of the dough. Mix it in with your hands. Now, knead your dough for 10 minutes at least or until it is stretchy & flexible! When you make a roundish bread shape & you push with your finger into the surface of the dough, it will get back slowly. Then your bread is ready for the 2nd rise. Place the round dough back again into the oiled bowl. Place  the double kitchen towel over it. Place back into the warm oven until it has been doubled in size. This took me 1 hour 20 minutes. My dough was tripled in size!

    Close oven door again & preheat it on 200°C for 5 minutes extra. Scatter some whole grain spelt flour over your kitchen counter. Take tripled dough out of the oiled bowl with help of a dough scraper. I baked my bread into a silicon oven tin. Mine was 27 cm x 13 cm. I didn’t need to grease my bread tin because it has been made from silicon!  I formed an oval bred shape & place it into the bread tin. I put this bread tin back into the warm oven & let the bread sit there for about 30 minutes for the last rise! 
  4. After this time, take your bread tin with risen dough out of the oven. Place a small ceramic oven dish onto the bottom of your oven & preheat your oven to 220°C (428°F) for 10 minutes. Now, slash the top surface of your bread dough for 3 times with a dough scraper or with a sharp knife. Pour hot water into the ceramic dish.Place the bread tin onto an oven rack, just above the water filled ceramic dish. Bake for 25 minutes. This way, you will create steam in your oven & that will give you a nice brown top of your bread! That is what you want! After this time, carefully remove the hot water bath with oven gloves. Now, place your oven rack to the lowest setting & turn your bread tin, 2 quarters. Lower your oven temperature to 200°C (400 °F) & bake for another 12-15 minutes. Turn oven heat off. Remove the bread tin out of the oven. Your bread is now golden brown in color! Lift your bread out of the tin. This goes easily & turn your bread over, so upside down. With your fingers, tap onto the bottom surface of your bread. If it sounds hollow everywhere, your bread has been bakes well & is ready to cool down completely. This took my bread about 1 hour. Now, slice your bread into slices & serve at once, best enjoyed with a loved one. I got 18 slices out of it! Yummy! ♥ Stay Tuned & subscribe by email to get the latest post in a cool newsletter!
