Vegan Pumpkin Pie

I'm thrilled to announce that the Vegan version of my mom's amazing pumpkin pie recipe turned out wonderfully!
Sorry I don't have a picture to show for it...by the time I thought to take a picture, it was eaten. :)
Anywho, for those of you who may be interested, here's the recipe. And I made it, so you most definitely can too!
Vegan Pumpkin Pie
1 small can pumpkin
6 tbsp. pureed soft tofu
4 tsp. cornstarch
1 c. sugar
1/2 tsp. salt
1 tsp. cinnamon
1/4 tsp. ground cloves
1/4 tsp. nutmeg
1/4 ginger
1 1/2 c. soymilk
Mix all ingredients and pour into pie shell.*
Bake @ 450 degrees for 10 minutes, then at 350 degrees for 60 minutes.
*I admittedly did not make my own pie shell. I simply used a frozen pie crust from the grocery store. However, you can find a vegan pie crust recipe here.
