I'm switching things up this week and giving you a recipe on this fine Fit & Fashionable Friday. Food is always in fashion, after all.

I'll never forget the day I had my first Dole Whip. It's creamy goodness. It's perfect sweetness. It's amazing allergy-freeness.

I was 9.3 miles into my 48.6 mile Dopey Challenge. The weight of my Mini Mouse 10K metal hung heavy around my neck. Angela, my running buddy, and I had been on our feet all day and were craving a reward just as awesome as we were. Fortunately, our tired feet were able to carry us a few more steps to Adventure Land, the most magical place in Disney's Magic Kingdom.

How does Adventure Land beat out Fantasyland and Tomorrowland as the most magical place? Because Adventure Land is the only place in the Magic Kingdom where vacationers, happy-go-lucky kiddos and weary runners alike can find the Dole Whip.

If you've never heard of the Dole Whip, allow me to enlighten you.

The Dole Whip is a soft serve frozen dessert created by the Dole Food Company. It's basically pineapple soft serve surrounded by fresh pineapple juice. It's dairy-free, gluten-free, cholesterol free, fat free and insanely delicious!

When Angela first told me about the Dole Whip, I was ecstatic! A dessert? That I can eat? Disney really is a magical place!

After devouring my Dole Whip and contemplating getting a second, I vowed to figure out a way to recreate this Disney magic at home.

This month's Recipe Redux theme reminded me of my mission:

Get Your Fruits and Veggies in Shape
With produce galore, now's a great time to enjoy lots of fruits and vegetables. Show us how you're serving the bounty of gardens and orchards in shapes like ribbons, noodles, cut-outs, or other creative cuts.

I headed to the store and bought myself a fresh pineapple. I sliced and diced that baby up and threw it all in the freezer (give or take a few fresh slices that may or may not have made their way to my mouth first).

A few days later, I set about my task, and low and behold, with just two simple ingredients, this homemade Dole Whip was born!

Two-Ingredient, Homemade Dole Whip {paleo, vegan, gluten free}

I'm very pleased to say that this Dole Whip pretty damn delicious. All it takes to make is frozen pineapple and coconut milk. Throw it in a blender, blend it up and bippity-boppity-boo, Dole Whip for you!

Like the original, it's dairy-free and gluten-free. It has some healthy fats from the coconut milk, but it's completely free of added sugar. It's also paleo and vegan!

The only thing that could make it better would be if it could transport me to Disney World whenever I took a bite!
