Turkey Sausage, Mushroom and Potato Gratin

Sometimes you just want hearty and rich comfort food, things like gratin or casseroles. This Turkey Sausage, Mushroom and Potato Gratin is all those great things that comfort food is but just a bit lighter. Turkey sausage instead of regular and a little less cheese. You need to make changes when you can!

 

When you leave it in for an extra minute or two and the cheese sets up and gets nice and golden brown. Now that is comfort food. Scott had 2 servings of this gone pretty quickly, all I heard was the mmm and yum while he was enjoying his dinner. This is one of those recipes that can be easily changed with a few different spices, a different kind of cheese or even using cauliflower or parsnips.

Turkey Sausage, Mushroom and Potato Gratin

Cook Time: 1 Hour 10 Minutes

Ingredients (Serves 4)

  • 2 sweet turkey sausage links, casings removed
  • 1 tbsp butter
  • 1 onion, finely diced
  • 4 ounces sliced mushrooms
  • 1 1/2 lbs red potatoes, coarsely chopped
  • 1/2 tsp kosher salt
  • 1/2 tsp freshly ground pepper
  • 1/2 cup chicken broth
  • Cooking spray
  • 3/4 cup shredded Italian blend cheese
  • 1 tbsp dried thyme
  • Pinch Red Pepper Flakes

Instructions

Preheat oven to 400°.

Heat a large nonstick skillet over medium-high heat. Add sausage to pan, and sauté for 5 minutes or until browned, stirring to crumble. Remove sausage from pan; drain. Wipe pan with paper towels. Melt butter in pan. Add onion; sauté 4 minutes, stirring occasionally. Add mushrooms; sauté 6 minutes, stirring occasionally. Add potatoes and salt; sauté 5 minutes or until browned, stirring occasionally.

Stir in sausage, broth and thyme. Remove from heat. Spoon potato mixture into an 11 x 7-inch baking dish coated with cooking spray; top with cheese. Cover with foil and bake at 400° for 30 minutes. Uncover and bake an additional 15 minutes or until golden.
