Tuna Pasta Salad

This is not your Grandma’s tuna pasta salad that is laden with mayo, overcooked noodles and peas. No, this Tuna Pasta Salad is full of veggies, delicious chunks of tuna and a flavorful balsamic vinaigrette. It may even get tuna haters (this includes me) to eat it.

I ate at least 2 servings of this at a get together with friends and at least twice during the week as part of my lunch. It is that good. I promise! The one ingredient that really does make the salad is the Bella Sun Luci Sun Dried Tomatoes. They sent me a few samples to try and I found myself snacking on them straight out of the bag when I made this salad.

Ingredients (Serves 6-8)

    For the Salad

    • 1 box vegetable pasta (such as Barilla)
    • 2 4 ounces cans chunk tuna in water (the bigger the pieces the better)
    • 1/4 cup sun dried tomatoes
    • 1 pint cherry tomatoes, halved
    • 1/2 cup shredded mozzarella cheese
    • 1 bag baby spinach
    • 1 bunch basil, torn
    • 1 tbsp Greek or Italian seasoning

    For the Dressing

    • 1/4 cup olive oil
    • 3-4 tbsp balsamic
    • 1 tbsp dijon mustard
    • 1 clove garlic, finely diced

    Instructions

    Cook the pasta according to directions and set aside to cool, or run under cool water.

    Whisk together olive oil, balsamic, mustard and garlic in a small bowl and set aside.

    In a large bowl combine cooled pasta, spinach, tuna, sun dried tomatoes, cherry tomatoes, basil, mozzarella and top with dressing.

    Serve immediately or chill for a cold pasta salad.
