Top Tips: Salmon with a Sweet Chilli Kick

I love this quick and simple marinade as something a bit different from the norm for salmon. 
It also works well as a marinade for pork steaks or flattened chicken for summer bbq’s.
It’s quick to prepare and whilst cooking in the oven gives you plenty of time to cook the rice and steam some fresh vegetables to serve with it.
You can also add some onion and chopped peppers in the same dish as the salmon if you wish for a bit of extra colour and crunch.

Serves: 2/3 People
What you will need...

350-400g Salmon filets/steaks (individual portions or one large piece)4 Tbs of light soy sauce (you can use reduced salt soy sauce for a healthier option)1 Lime (juice and finely grated rind)1 cm cubed of fresh ginger finely grated1 garlic clove finely grated1/2 -3/4 mild red chilli finely chopped (with or without seeds depending on how hot you like things)2-3 Tbs of honey1 Tbs sesame seedsBy finely grated the garlic and ginger will really release its full potential flavour.If you haven’t got any garlic you could use a light drizzle of garlic olive oil instead.What you will need to do...
·   Preheat oven to gas mark 4 180C·   Line a dish with tin foil (as honey in this recipe gets rather sticky in the oven so will make for easier washing up afterwards to line dish!)·   Add Salmon along with all the prepared ingredients as above·   Cover with foil and cook for about 30mins, then take off foil and return to oven for a further 5-10mins (it will depend on oven and size of salmon for exact timing)·   Whilst salmon is in oven, cook rice and steam some fresh vegetables·   Follow link for how to cook fuss free basmati rice: How to cook perfect rice
