Tomato, Bratwurst and Potato with Mustard Vinaigrette

The Tomato, Bratwurst and Potato with Mustard Vinaigrette lunch box. It’s a lunch box that’s easy to prepare, delicious and filling enough to get you through the second half of your work day. Not just on a work day, you can also prepare this in your own home for a nice hearty lunch. Fresh sweet cherry tomatoes and sweet potatoes with the tangy taste of sweet, sour and mustard spiciness, this lunch box recipe will perk you up no matter where you are having it. There are only this many ingredients you will need and they are:

Ingredients (Serves 2):

  1. 2 potatoes.
  2. A handful of sweet, ripe cherry tomatoes.
  3. 4 Bratwurst sausages. (I’m using Garlic Bratwurst here but any types of sausages works just as well)
  4. 11/2 teaspoons of Mustard.
  5. 11/2 teaspoons of white cider vinegar.
  6. 2 tablespoons of extra virgin olive oil.
  7. Small pinch of sugar.
  8. Salt and black pepper.

*Items (4) to (8) for the Mustard Vinaigrette dressing.

Method:

1. Skin and cut up the potatoes. Boil them in water for about 25 mins.

2. Make the Mustard Vinaigrette dressing. With a small dish or a jar, add in the mustard, white wine vinegar, sugarextra virgin olive oil, salt and black pepper. Mix them well. To know if your dressing is doing well, the end result should be a viscous dressing with tangy taste of sweet, sour and spicy. Set this aside.

3. Halve the cherry tomatoes.

4. Once 25 mins is up, drain the potatoes in a strainer and set the potatoes aside.

5. Cook the bratwurst. (Note: If lack of time, you can buy these of the counter in supermarkets). With olive oil and bit of butter, cook the sausages till their skin “bursts”.

6. With a lunch box, set in the potatoes, litter with halved cherry tomatoes and finally top with the bratwurst. You can choose to cut the sausage into bite-sized pieces or eat it as a whole. Lightly coat what’s in front in your lunch box with the mustard vinaigrette dressing. Drizzle more if you are a dressing person.

This recipe is easy to prepare without the hassle of involving many kitchen works and time consuming processes. Especially after a day’s work when that’s the only time to prepare lunch box meal for the following work day, the Tomato, Bratwurst and Potato with Mustard Vinaigrette lunch box definitely will not disappoint you in any way whether in terms of taste, preparation and getting the wows from your colleagues.
