China Kitchen at Hyatt Regency, Delhi needs no introduction. The place stands tall with its impeccable Chinese fare and so does the hotel for numerous of its qualities. The restaurant has recently come out with a new menu, and Chef Jack Aw Yong, the Executive Chef at Park Hyatt Beijing, flew down specially to work on it. Interestingly, Chef Jack kickstarted China Kitchen in Delhi when it first opened years ago.

The New Menu at China Kitchen, Hyatt Regency Should Not Be Missed!The menu has a lot of new additions to it, a new look- making it more vibrant and visually appealing (with pictures of dishes too).From the salads, dimsums, appetizers, to the mains and desserts too, there are new additions everywhere. I started off by trying Beijing style vegetable dumpling and Mushroom "Shao mai" dumpling with truffle oil. Both really flavourful, with a translucent coating on them and a filling that's juicy. The restaurant is doing a damn nice Red Chilli Coriander Shrimp Mousse, which is shrimp mashed and stuffed inside a bird's eye chilli, sliced half open. It sits on a delicious ginger soy sauce. Spicy, yes, but with a burst of flavours in the mouth. One of the star dishes for me.

China Kitchen's famous Twice-cooked crispy Lamb Shanks were a real treat to gorge on. With an exterior that's marvelously crisp and perfectly cooked, and lamb that's still juicy inside, it becomes even better with the sweet chilli sauce on the side. A classic I would say, you shouldn't miss this at China Kitchen. It's one of those dishes that belong to a restaurant and nobody else can even come close to replicating it.


The New Menu at China Kitchen, Hyatt Regency Should Not Be Missed!The New Menu at China Kitchen, Hyatt Regency Should Not Be Missed!Our mains saw Northern-style fried rice and Sichuan Fried Noodles, with Braised Spicy Pork, Traditional "Mapo" tofu, and Stir-fried Asparagus. It comes as no surprise that the noodles and rice were bang-on with the flavour, without being oily. The fried rice had a superb crunch to the vegetables in it, and the noodles had a lovely aromatic taste. Went so well with the mains. Cannot emphasize enough on how good the mains tasted. The Braised Spicy Pork wasn't as spicy (maybe because I'd already had the Shrimp mousse with bird chilli and hit the highest spot for chilli for my day), but the pork was brilliantly cooked! It could be broken off with a fork, and the crispness of the pork's exterior with the soft luscious pork belly definitely got me all excited not to forget the mouth-watering taste). Irrespective of how full I was already, it paved way for the rest of the mains for me, and I'm so glad that happened. Because the vegetarian fare was up next. Stir-fried asparagus- something I don't usually fancy, but had a generous helping of. Crunchy, crispy, with a deliciousness to it- salty, not spicy but full of flavour, had a yummy punch to it, and came with porcini mushroom and crispy shallot. It wasn't a curry, but more of a dry dish that goes really well with your noodles. The Traditional "Mapo" tofu was the star of the mains for me. It's one of those dishes that everyone loves. It has vegetables, it has such a yummy tofu with a silken texture, it has lots of garlic in the flavor (I love garlic), it has some chilli, and the curry is there in abundance. There's not one thing I don't love about this dish.

Desserts saw the China Kitchen Dessert Platter- Sweet "Memories". It has a selection of multiple desserts- two scoops of delicious Chocolate and Mango icecream each, a smashing Crème brûlée, fresh cut fruits, chocolate filled baked crispy puffs that are just so comforting, three pieces of chocolates (dark, white and milk), baked soft shell pastry tart with custard in it. It has something for everyone. And it's super delicious! All the elements. Then comes China Kitchen's most loved dessert, and a very light one at that. It looks deceivingly heavy but it isn't. A chocolate cigar with a very thin crisp tempered chocolate rolled into a cigar, fluffy cream inside, and liqueur to pour on top. Yes, liqueur- that's the exciting part about this. It's there and it's really evident, because you pour it yourself, and if you love chocolate with liqueur then you're in paradise. You have three options with the liqueur, and you choose what you fancy. I went with the orange liqueur, and the flavor was so strong!! A very very good dessert.

The menu has something in store for everyone and it not only exceeds the expectations of its patrons but also delights them. Takes a lot to add new dishes to a menu that people know by heart. But China Kitchen pulls it off brilliantly. The food is spot on with flavours- it really does make your mouth water. China Kitchen now stands even taller when you talk about Chinese cuisine in Delhi.
