Thanksgiving Dinner

I don’t know about you guys but I for sure have Thanksgiving on the brain. I love when the holidays roll around, and look forward to spending that time with my family and friends each year. And what’s almost even better than good old friend and family QT, are the amazing family dinners. I’m a New Orleans native, and we definitely know a thing or two about food. I pulled together a few recipes I’ve been itching to try that I thought would work well for your Thanksgiving dinner. If you decide to give any of them a try, let me know how it turns out!

Slow Cooker Potato and Corn Chowder  (pictured above)

A hearty comforting soup that gets bonus points for it’s super easy recipe – just throw everything in a slow cooker and go!

Keep in mind: you’ll need adequate time to prepare this tasty chowder. I’d let everything cook overnight or even the day before Thanksgiving.

Southern Sweet Potato Casserole

Ahh, sweet potatoes. They happen to be one of my personal favorites at holiday dinners. My family can surely attest to how much I love them! I happened to actually make this dish this past Easter using this recipe, with just a few tweaks:

It’s worth it to get fresh sweet potatoes over the canned version. Wrap in foil and bake until tender. Let them cool and peel off the skin, then mash. I used about 8 medium sized sweet potatoes, which equals to about 6 cups of cooked mashed sweet potatoes. I then followed the tips of a commenter on the recipe and doubled the sugar, and only used 1 large egg. I only put in a very small amount of milk to smooth it out a bit. I then finished the dish following the exact instructions. It was delicious!

Most Thanksgiving dishes are very heavy and rich. For those of us who are craving something a bit lighter on their dinner tables, this dish is for you. It makes for a great lighter side dish option and helps to balance out all of those heavier foods.

Truffled Mac and Cheese with Prosciutto 

No Thanksgiving dinner is complete without the Mac and Cheese in my opinion. This recipe ups the ante and adds prosciutto and truffle oil. Who can say no to truffle oil? There’s also this version of Mac and Cheese that I’ve been dying to try, which involves crab meat. I’m a sucker for any seafood. I blame my Louisiana roots.
