Sweet Potato Biscuits

INGREDIENTS
Makes about 24
1¼ cups flour
4 teaspoons baking powder
1 teaspoon salt
1 tablespoon salt
1 tablespoon brown sugar
¾ cup mashed cooked sweet potatoes
2/3 cup milk
4 tablespoons butter or margarine, melted
Preheat the oven 450°F
Sift the flour, baking powder and salt into a bowl. Add the sugar and stir to mix.
In a seperate bowl, combine the sweet potatoes with the milk and melted butter or margarine. Mix well until evenly blended.
Stir the dry ingredients into the sweet potato mixture to make a dough. Turn onto a floured surface and knead to mix for 2 minutes.
Roll or pat out the dough to ½-inch thickness. Cut out round with a 1½-inch cookie cutter.
Arrange the rounds on a greased cookie sheet. Bake until puffed and lightly golden, about 15 minutes. Serve the biscuits warm.
