Sweet and Savory Pantry Appetizers

Hey guys!  How are you doing?  I hope the holidays went well for you – they did here.  I am bringing you an easy and quick appetizer that is perfect for Super Bowl Sunday, won’t cost a mint and satisfies those who like a little sweet with their savory and those who like a little savory with their savory!  I found the first part of this appetizer recipe on Pioneer Woman TV Show and the second part I made up myself.  Ree said that her mom made these in the 70’s for all the parties she gave.  Sounded easy and quick so since I had everything I needed, I put them together – with a little help from Rocket – in just a few minutes and they were so tasty it only took a few minutes after I snapped the photos for all of us to eat them.  My recipe made a couple dozen of each kind, but there were 9 of us here so it’s not like we were pigs or anything…………..I know what you were thinking!

Let’s get started with the ingredients:

1 package of the cheapest (thinly sliced) bacon you can find – generally about 12 oz. to 16 oz.

1 sleeve of Club-style crackers

¾ Cup of the cheap (green lid) Parmesan cheese

¾ Cup brown sugar

Directions:

Cut all the bacon strips into thirds.

Lay out all the crackers on a cooling rack that fits into a large baking pan that you can put parchment paper in the bottom of………I did not do that and you really should.

Get a healthy pinch of Parmesan cheese and sprinkle on top of each of ½ of the crackers and do the same with the other half of the crackers using a healthy pinch of brown sugar.

Gingerly, pick up each cracker and wrap with one of the thirds of bacon and lay back down on the rack.

Preheat the oven to 250F.

Place the bacon wrapped crackers into the oven for 2 hours……………yes, 2 hours.

When you take them out, you can either serve right away or at room temperature.

My favorite are the ones I made up with the brown sugar.  You could make these all afternoon the day of the game and still not make enough!

Rocket wanted me to add a photo of him holding “his” crackers since he helped me make them.  I promised I would – I just cannot say no to the boy!
