Super Easy and Delicious Yoghurt Banana & Berry Popsicles

Yesterday evening I made these super delicious yoghurt and berry popsicles, using freshly picked blueberries from the forrest. These popsicles are easily whipped up and frozen over night, just perfect to eat and serve the following day. You can add any berries you prefer, puree them or fold them in least to have a crunchy texture. This recipe consists of only 5 ingredients!! No excuses, making ice-cream from scratch is not difficult at all! ;) And way more variable and divine than storebought! There´s also a vegan addition to this recipe adding soy yoghurt and agave syrup!!!

Ingredients:

  • 1 banana
  • 400g yoghurt/ soy yoghurt
  • 1 tbs. of honey/ agave syrup
  • 3 leaves of mint
  • 200g blueberries

Combine all ingredients in a blender and blend until well combined. You can set aside 1 tbs. of yoghurt to add yoghurt patterns on the blueberry surface. Fill ice cream into popsicle molds, add ice cream sticks or teaspoons to each mold. Freeze over night, or up to 4 hours.
