Stuffed Roast Chicken with Chorizo, Gordon Ramsay's Recipe

STUFFED ROAST CHICKEN WITH CHORIZO, GORDON RAMSAY'S RECIPEI've been a huge fan of Gordon Ramsay for years. So much passion for food, great recipes to try, impressed guests and family members garanteed. His stuffed roast chicken with chorizo is one of my favorite recipes. I make it ever time I manage to score a good bird at the market. Here's the recipe.
Ingredients: 
1 whole chicken
spicy saussage, like chorizo
1 onion
2 cloves of garlic
1 small tin of cooked beans (I prefer to cook them myself but the beans from the store will work very well. I also often use chickpeas instead of beans)
sundried tomatoes
salt
pepper
thyme
olive oil
paprica
white wine, half a cup
water, half a cup
1 lemon
Method:
Prepare the stuffing:
Cook down cherizo saussage in olive oil, add chopped onions, garlic and thyme. Allow the onions to become lightly golden brown, add your beans, salt, pepper, sundried tomatoes. Cook for a few more minutes.
Prep your chicken. Wash it and dry with a towel. Salt the inside of the chicken, add a lit of pepper. Stuff your chicken with the prepared stuffing, close it all with lemon. Salt the top of the chicken, add pepper, drizzle a bit of olive oil on top, then rub in your paprica.
Preheat your oven to 190C. Take your baking tray, pour your water and wine in the tray to help the chicken cook better in the oven, put your chicken in, cover it with tin foil, put it in the oven and cook for 1 hour. Then remove the foil and cook in the oven for another 30 min to allow it to brown.
Take your chicken out of the oven, allow it to cool slightly, take out the stuffing, pour a bit of cooking juices over it, carve the chicken and serve over cooked rice or potatoes. Enjoy!
