Steak, Couscous and Roasted Vegetables

This is another easy dish that is really quick to put together.  It’s also two of your five portions of veg and there is lots of iron in the steak!

You can use any vegetables you like, I chose these three as I had them in the kitchen and they take around the same time to cook.

This is what you’ll need to feed two people and it will take around 15/20 minutes:

Steak Couscous Roasted Veg Ingredients

  • One packet of ‘ready to go’ couscous (or 300g if preparing it yourself)
  • 2 flash-fry beef steaks
  • 1 red pepper
  • 1 red onion
  • 150g broccoli
  • Splash of Oil for frying
  • 2 cloves garlic, peeled and minced

Chopped Vegetables

Start by pre-heating your oven to 180/200 degrees.   Put a frying pan (or wok) with a splash of oil onto a medium/high heat.  Then chop your vegetables and fry them up for two minutes with the garlic.

Fry Vegetables

Transfer the vegetables to an oven dish and let them cook for around 8 minutes.

Roasted Vegetables

While the vegetables are roasting away, put the kettle on  and make the couscous according to the packet instructions.  I tend to just pop it in a jug/bowl, add boiling water, give it a good stir, then cover it with a plate and leave it for five minutes.

Using your frying pan (or wok) cook the steaks.  I used ‘flash fry’ steak, which I cooked for around 1 minute on each side.  Flash fry steak is really thin and I like my steak medium/rare – so if your steak is thicker or if you prefer it medium or well done, you’ll need to cook it for longer.

If all has gone to plan, everything should now be ready for serving…
