Spinach Dip - Kellis Kitchen

Mother, who was a Medical Technologist, came home from work one day with a recipe from the head tech whose name was Roy.  Roy and his wife Lynne were (and still are I hope) among the kindest people I have ever met and Lynne was quite a cook too.  The Laboratory where mom worked had many potlucks in the 40 years she worked there and she often brought home recipes whose authors ranged from Pathologists to Cytotechnologists but she seldom ever made any of them – this recipe was the exception.  As I look at the paper in Roy’s handwriting, it is called Spinach Salad but it is hardly that although mom always prepared it in a 9 x 13 Pyrex dish and after refrigeration, cut it into squares and served it that way.  We always loved it but I prefer it as dip so that’s how we serve it.  It is delicious and although I’m not a big pretzel fan – it tastes perfect served with them.

Ingredients:

1 package of frozen chopped spinach drained and squeezed “dry”.

1 eight-ounce packages of cream cheese, softened

1 cups shredded cheddar cheese

1 cup mayonnaise

¼ cup horseradish sauce

1 bunch green onions, chopped and separated

Directions:

Put all ingredients except for a few of the green onions and mix well.

Place dip in a bowl and cover tightly, refrigerating for at least 3 hours and best overnight.

When ready to serve, put in serving dish and sprinkle leftover green onions over top.

Serve with pretzels, chips, vegetables or whatever you choose.  Enjoy!

Soup Bowls - Kellis Kitchen
