Spinach Basil Pesto Pasta

If you’re looking for a flavorful, fresh and easy recipe that will sure impress friends and family this is for you.  Sneaking in spinach has never been so easy no one will expect this delicious basil pesto to be packed full of baby spinach.

Ingredients

  • 1 1/2 cups baby spinach
  • 1 cup fresh basil
  • 1/2 cup toasted sunflower seeds
  • 5 cloves garlic, peeled
  • 3/4 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 1/4 cup olive oil
  • 1/4 cup water
  • 1/2 a bag shell pasta – cooked
  • 1 large tomato, chopped

Directions

Place everything except the tomato and pasta in the blender and blend until smooth.

In a large bowl add the pasta and pour the basil pesto over the pasta.  Stir until well coated.  Add the fresh tomato and serve.  This keeps well in the fridge and can be made well in advance.
