Spinach Artichoke Dip

If you are in the mood for rich creamy cheese heaven, this would be a great solution. This is a very American inspired dish, I used have this in Olive Garden, BJ’s Bar and Grill and even California Pizza Kitchen – they all varied slightly but have the main concept – creamy cream cheese with spinach served warm. This Spinach Artichoke dish is simple and a great party food dish or starter. Amazingly if you are following a low card diet – this is perfect!
Spinach Artichoke Dip

 

Ingredients:
200g Garlic & Herb Cream Cheese
100g Mayonnaise
100g Greek yogurt
100g Artichokes chopped
200g Spinach Fresh or frozen
1/2 Tsp Parsley
1/2 Tsp Garlic powder
100g Parmesan

In a pan, cook the fresh spinach for a few minutes

Until softened and wilted. If using frozen spinach then defrost and squeeze out excess water.

Add Spinach and chopped artichokes to a bowl

Then add cream cheese, yogurt, mayo, garlic powder, parsley & 3/4 of parmesan (75g)

Mix well making sure everything is combined.

Spread evenly in an oven proof baking dish

Sprinkle remaining parmesan over the top. You can either bake right away or keep in the fridge ready for later.

Spinach Artichoke Dip

Bake at 200c for 15-20 minutes until the parmesan turns golden brown. Serve warm with bread, tortilla chips, crisps, bread sticks or even crudities.
