Spicy Quinoa Bowl with Cilantro Dressing.

It is a cloudy and rainy day here. I sure am missing Summer right about now. I’m sure you guys are tired of me complaining about my lack of Sunshine, and hate for Winter. I am so excited for it to be in the 50′s tomorrow.

I cannot believe I just said that.

Since there will actually be a sunny day, we are venturing into NYC in the morning. We are going to check out the Art Museums and have a picnic in Central Park. Yes I will still be bundled up with a cup of coffee in hand, but at least it will begin to feel like Spring is right around the corner!

I have been living off burrito bowls as of late. They are such an easy way to cram in a bunch of high fiber beans and veggies to your diet! I love this recipe, let me know if you try it!

INGREDIENTS

2 Cups Cooked Quinoa
1 Cup Cooked Corn 1 Cup Cooked Black Beans or Kidney Beans…. or any Bean of your choosing

2 Poblano or Anaheim Peppers roasted and then chopped {click here for roasting instructions}
1 Avocado, chopped
1 Cup Tomatos, chopped Salt and Pepper to taste To make the DRESSING:  juice from one lime
1 t. honey or maple syrup 1 cup cilantro
1 cup Greek yogurt
1/4 cup olive oil salt and pepper to taste Dash of Cayenne Pepper Place the quinoa, corn, black beans in a large bowl and mix well. Gently stir in the chopped peppers and tomatoes.  Season to taste with salt and pepper. Place all of the dressing ingredients in a food processor or blender. Blend until smooth. Scoop the quinoa mixture into bowls for serving. Drizzle with Cilantro Dressing, and top with sliced avocado.  You can add grilled chicken or tofu if you want for added protein as well!
