Spicy Boiled Scrambled Eggs

The Spicy Boiled Scrambled Eggs is just a random recipe I tried with a mix of ingredients available at home. Actually it was Roti and dhall curry for dinner. To make omlette was the idea. But it turned out to be a spicy dish as dhall curry was bland. This is a quick stir fry with simple ingredients. Its a good combo for rice, dosa, roti, pulao etc., This Spicy Boiled Scrambled Eggs can be quoted as bachelor recipe too.
Serves: 2 Cooking Time: 10 minutes Preparation Time: 5 minutes
Ingredients:
3 tablespoon of vegetable oil 1 onion thinly sliced Few springs of curry leaves 1 tablespoon of ginger garlic paste 2 hard boiled eggs scrambled 1 teaspoon red chilly powder 2 tablespoon coriander powder 50 ml water salt as per taste
Method: Spicy Boiled Scrambled Eggs Heat a wok with 3 tablespoon of vegetable oil.
Add sliced onion and saute till sliced onions turn golden brown. (Refer Notes)
Meanwhile scramble hard boiled eggs.
Once onion is well caramelized, add curry leaves and ginger garlic paste.
Fry well till the raw smell goes and curry leaves turn crisp.
Spicy Boiled Scrambled Eggs Add coriander powder, chilly powder and salt and toss well for a minute. Add 50 ml water and let the masala boil and thicken for a minute. Add scrambled eggs and put off the flame. Mix the eggs to coat the masala evenly. Let the Spicy Boiled Scrambled Eggs set for around 10 minutes before serving.

Notes: The quantity of onions can be further increased if you need more masala. Onions should turn brown but should not get charred. The onion browning adds extra flavor to the dish Spicy Boiled Scrambled Eggs. Eggs should be hard boiled for this dish.
