First one up, Perfect Eggs Mayonnaise (or Deviled Eggs for you North Americans).  A fabulous recipe to use up some of those hard-boiled eggs you have coloured for the holidays.  Included with the recipe are my fail-proof tips on creating perfect hard-boiled eggs that are not only done right, but are easy to peel.

Something a bit different than the usual roast.  This will be on my menu this Easter.   Roasted Rack of Pork and Roots with an Apple Horseradish Sauce.  Perfectly roasted and succulent roast pork, with accompanying roasted root vegetables and a delicious apple sauce made just that little bit different with the addition of fiery horseradish!  So good.

A delicious Roasted Leg of Lamb with Lemon and Thyme.  This really is a fabulous version of roasted lamb.  You make a marinade paste and rub it all over the lamb, allowing it to marinate overnight.  Simply roasted prior to dinner on the day.   Some of the roasted paste along with the lamb juices are used to create a delicious gravy/sauce to pass at the table.  It really is special and just that little bit deliciously different!
