Skinny Choc Raisin Muffins

At only 101 calories these low-fat no sugar skinny muffins are a great healthy treat! Yes I said it – No sugar and Low fat!

Using MyFitnessPal I worked out nutrition facts for these Skinny Muffins: Fat 1.5g, Carbs 19.8g, Sugar 7.8g, Protein 2.8g and Fiber 1g or if you follow weight watchers these are only 3pro points!

When you think that a regular muffin has over 250 calories – you could have 2 of these with calories to spare! The fruit adds sweet moistness to the muffins with the natural sweetness from honey.

There is no artificial sweeteners just clean healthy ingredients. You can easily add or remove the added extras to these muffins, if you switch out the raisins for cherries and chocolate for chopped apricots!

Ingredients
1 Banana
1 Apple
1 Tbsp Unsweetened Almond milk
1 Egg
25g Honey
1 tsp Baking soda
25g Dark Chocolate chips (70%)
50g Raisins
1/4 Tsp Salt
1 tbsp Vanilla
150g Wholemeal flour
1 Tbsp coconut oil
50g Fat free greek yogurt

In a food processor add a peeled banana and peeled roughly chopped apple.

On medium speed chop until the fruit is blended.

Add unsweetened almond milk, egg, vanilla and honey into the food processor and on medium speed blitz briefly.

Then add the salt, baking powder, coconut oil, whole wheat flour and yogurt. Mix well for about a minute on medium speed.

Add the dark chocolate chips and raisins.

Stir in the chocolate chips and raisins.

Add  the batter evenly to 12 cup cake cases.

Bake in the oven at 180c for approximately 20-25 minutes.

Allow to cool slightly and enjoy!

Due to the limited fat in the muffins, they may stick slightly to the cup cake case.
