Simple Cornbread Recipe

When my brother and I were kids, every other evening we would ask our mother a snack. It had to be something different every time and she would manage to come up with something new. Now, that I have picky eater for a daughter, I realize how difficult we made mom's life. Thankfully, we have a majority of people with a sweet tooth in this household. One of our favorite food to snack on is a cornbread which can be prepared in a jiffy.

Here is the recipe that I use, You can reduce the amount of water and add an egg instead.

2 teaspoons of baking powder

1/2 cup sugar

Preheat the oven to 400° F. Mix all the dry ingredients in a bowl and add milk and water. Whisk until all ingredients are mixed (don't overmix). Add melted butter and stir and mix with a spatula. Pour the mixture into a 8X8X2 Pan and bake for 15-18 minutes. This recipe is perfect for fall as the days get colder.
