Sherry Cherry Loaf

I new loaf creations using the basis from my Sweet & Short book by Dan Lepard. As usual I didnt have all the indgredients so I made some alterations!

Ingredients:
100g margarine
150g Caster Sugar
150g Plain Flour
1 1/2 Tsp Baking Powder
1 tsp Vanilla Extract
25ml Sweet Sherry
2 Eggs
65g of Glace Cherries
60g of Black Cherry Jam
Demerara Sugar sprinkled on top.

In a mixing bowl add the margarine, eggs and sugar and cream together.

Add the flour, baking powder and vanilla and mix for another minute or so.

Break up the cherries into smaller pieces.

Add the cherries, sherry and jam and mix again for another minute.

Spoon into a greased loaf tin.

Sprinkle on some demerara sugar on top before placing in the oven.

Bake in the oven at 170c for about 40-45mins until golden brown and tested with a cake tester.

Remove from cake tin and allow to cool.
